Blood Orange Meringue Tarts

Blood Orange Meringue Tarts 1200 800 Round Pond Estate

Chef Jamie’s Blood Orange Meringue tarts are deliciously elegant, with the unmistakably sultry sweetness of fresh Blood Orange juice and our exceptionally pure Blood Orange Citrus Syrup.

Ingredients

2 pkgs mini phyllo dough shells (30each)
2 cups blood orange juice
4 each blood oranges, zested
1 cup sugar
½ cup Round Pond Blood Orange Citrus Syrup
6 each egg yolks
¼ cup lemon juice
¼ tsp salt
8 Tbsp butter
4 each egg whites
¼ tsp cream of tartar
1 cup sugar

Place blood orange juice in a saucepan and reduce by half over medium heat. Once reduced, let cool.

In a stainless steel mixing bowl, add the zest, egg yolk, blood orange syrup, and sugar and beat until fluffy and lighter in color.  Next, add the cooled blood orange juice to the egg yolk mixture along with the lemon juice and salt.  Place the bowl over a double boiler and whisk until it is thick enough to coat the back of a spoon (about 170 degrees).  Once the correct consistency and temperature are achieved, add butter in small portions and continue to mix.  Strain this curd through a fine strainer and chill.  When the curd is fully chilled, fill the phyllo cups.

To make the meringue, place the egg whites and cream of tartar into a very clean kitchen-aid mixing bowl and whip using the whisk attachment.  Whilst whisking, slowly adds the sugar until incorporated.  Continue to whisk until the meringue is at stiff peaks.

When the meringue is finished, place a dollop on each of the tarts.  Using a blow torch, torch the top of each tart and then serve.  Enjoy!

Blood Orange Rock Shrimp Ceviche

This bite-sized Rock Shrimp Ceviche is the perfect combination of tangy and sweet that pairs wonderfully with our Rutherford Sauvignon Blanc.

Ingredients:
1 lb fresh rock shrimp, rough chop
½ medium lemon
½ medium red onion, minced
2 each avocado, diced
2 each Roma tomato, seeded and diced
3 tsp salt
1 small lime, juiced
½ cup Round Pond Estate Sangiovese Blend Red Wine Vinegar
2 tsp shallots, minced
3 tsp blood orange concentrate or juice
2 tsp Round Pond Estate Blood Orange Citrus Syrup
1 ½ cup Round Pond Estate Blood Orange Olive Oil
24 tortilla chips, round preferred
24 cilantro leaves

Begin by poaching shrimp in boiling water with half lemon for 1 minute. Remove shrimp from water and place in ice bath. Once completely cooled, remove shrimp and toss with red onion, avocado, tomato, 1 tsp salt, and lime juice. Place in refrigerator and chill.

For the vinaigrette, place Sangiovese Red Wine Vinegar, shallots, 2 tsp salt, Blood Orange concentrate and Blood Orange Syrup in a mixing bowl, then slowly whisk in Blood Orange Olive Oil. Once all the oil is incorporated, reserve vinaigrette for assembly.

Start assembly by tossing rock shrimp mixture with 3 Tbsp vinaigrette. Place a spoonful of the shrimp mixture on each tortilla chip and top with cilantro leaf.  Arrange on a platter and enjoy!

Makes 24 bite-size pieces.

OUR BLOOD ORANGE OIL & SYRUP RECOMMENDATIONS

 

  1. Make a Cocktail – Muddle rosemary and shake with gin and our Blood Orange Syrup. Add a quick splash of club soda for a little fizz.

2. Make an Appetizer – Mash avocado onto toasted baguette slices. Drizzle with our Blood Orange Olive Oil and sprinkle with coarse sea salt.

3. Make a Cake – Use our Blood Orange Olive Oil in place of olive oil in a polenta olive oil cake, and top with a candied orange peel.

4. Make Dessert – Drizzle Round Pond Blood Orange Syrup over vanilla ice cream and top with whipped cream and slivered almonds.

5. Make an Easy Bite – Finely slice a fennel bulb and serve on a platter sprinkled with coarse sea salt. Whisk together Round Pond Blood Orange Olive Oil and Blood Orange Syrup and serve with fennel for dipping.

6. Make a Glaze – Whisk Round Pond Blood Orange Syrup with hot chili flakes as a sweet, hot glaze for grilled shrimp or pork.

7. Make a Snack – Drizzle hummus with our Blood Orange Olive Oil, and top with dukkah (an Egyptian condiment consisting of a mixture of herbs, nuts, and spices).

8. Make a Sweet Treat – Spread melted chocolate over toasted brioche slices. Drizzle lightly with Round Pond Blood Orange Syrup and Blood Orange Olive Oil and sprinkle with sea salt.

9. Make an Hors D’Oeuvre – Drizzle Round Pond Blood Orange Syrup over feta cheese and serve with crostini, kalamata olives, and water-soaked walnuts (soaking walnuts overnight in water removes the phytic acid that makes your mouth itchy).

10. Make Veggies Special – Drizzle our Blood Orange Olive Oil over roasted or grilled beets, sweet potatoes, winter squash, brussels sprouts, zucchini or green beans.

This easy cocktail is a snap to make and boasts some beautiful colors and bright flavors!

Ingredients
1.5 oz Hendricks Gin
1/2 lemon
0.5 oz Lillet
0.25 oz Round Pond Blood Orange Syrup
orange peel for twist
Ice

Pour all ingredients into a cocktail shaker with ice. Shake well, pour into chilled martini glass. Finish with twist of orange peel.  Enjoy!

A citrusy spin on the classic Old Fashioned, this fantastic drink is a lovely warm orange color that makes it a perfectly festive autumn cocktail.

Ingredients
1.5oz Woodford Reserve Bourbon
1 oz soda water
1 wedge of Blood orange
1 Amarena Cherry
1/2 tsp Round Pond Blood Orange Citrus Syrup
Ice

In a cocktail glass, muddle Blood orange wedge and cherry. Pour ice, bourbon, syrup & soda next. Stir gently and enjoy!

London Calling

If you’re a gin lover, this cocktail is a must-try!   The London Calling is comprised of two types of gin paired up with our Blood Orange Citrus Syrup and blood lime.

Ingredients
1 oz Sipsmith Gin
.5 oz Sipsmith Slow Gin
.5 oz Pimms #1
.5 oz Round Pond Blood Orange Citrus Syrup
1.5 oz Blood lime juice
1 egg white
Garnish with Blood lime twist

In a cocktail shaker, add all ingredients (except garnish) and shake well.  Then add ice, shake again to chill drink. Pour into martini glass, then finish with twist of Blood lime.  Enjoy!

Dirty Ancho Blood Orange Margarita

Tart, hot, sour and sweet … this Dirty Ancho Blood Orange Margarita is a fun new spin on the traditional drink!

Ingredients
2oz Fortaleza Blanco Tequila
1.5oz Round Pond Blood Orange Syrup
.5oz Cointreu
.5oz Luxardo Cherry
.5oz fresh lime juice
.5oz fresh lemon juice
3 dashes of Tapatio hot sauce
Ice
thyme garnish
Salt or Chile lime salt rim

First, take highball glass/margarita glass coat the rim with a lime wedge then onto plate with salt.  Coat the rim lightly!  Then take shaker pint and fill with tequila, Cointreau, Luxardo, lemon & lime juice, Round Pond Blood Orange Syrup and Tapatio hot sauce with .5 oz of freshly-squeezed lime juice.  Fill shaker pint with ice and shake.

Pour contents of shaker pint into salted rim glass and garnish with a sprig of thyme or blood orange slices.  Enjoy!
