19-Year Aged Balsamico 100mL

Each fall, we harvest grapes from our Rutherford vineyards and cook the unfermented juice over open flame. The concentrated vinegar is then stored in specialized wooden casks. As the Balsamico ages, it becomes more concentrated and condensed. Each year, the vinegar is transferred in succession from one increasingly smaller wooden cask to the next. In the coolness of our acetaia, the Balsamico continues to grow more deliciously complex in flavor over the course of 19 years.  

Handcrafted and bottled in the ancient tradition, our 19-year-aged Balsamico displays aromas of dried sweet cranberries, dates, golden raisins, and ripe mission figs, followed by an undercurrent of Madagascar Vanilla and brown sugar.
