Made in the Méthode Champenoise, this Blanc de Blancs aged en tirage for 18 months before being disgorged. Beautifully juicy and refreshing with delicate bubbles and a rich mouthfeel. 

Tasting Notes

This pale yellow sparkling wine offers delicate, lacy bubbles in the glass and aromatic notes of pear, lemon zest, and toasty almond. Notes of apple and brioche are balanced with juicy, mouthwatering citrus. Structured with bright acidity and a creamy, long finish, this sparkling wine showcases the beauty of the fruit.

Vineyard Notes

The Chardonnay for this sparkling wine comes from a sustainably farmed vineyard in the Russian River Valley where deep clay-based soil and the cooling coastal fog create ideal growing conditions. After being hand-picked, the grapes were delicately pressed, discarding the juice at the beginning and end of pressing and only keeping the quality juice pressed in the middle. This pressing method helps to retain acid and promotes a secondary fermentation that produces the quality effervescence of high-end sparkling wine. Made in the Méthode Champenoise, the wine aged en tirage for 18 months before being disgorged, where it received a dosage of 6 g/L to add to its complexity and balance.
