
17-year aged Balsamico 100mL
Each year we harvest the grapes from our Rutherford vineyards and cook the unfermented juice – the musto – over an open flame. The concentrated vinegar is then rotated from one increasingly smaller wooden cask to the next. In the coolness of our acetaia, the balsamico slowly ages and continues to grow more deliciously complex in flavor throughout the years.
Handcrafted and bottled in the ancient tradition, our 17-year-aged Balsamico displays aromas of dried sweet cranberries, dates, golden raisins, and ripe mission figs, followed by an undercurrent of Madagascar Vanilla and brown sugar.
