Blood Orange Rock Shrimp Ceviche
This Rosato is pale salmon in the glass with an expressive nose of candy peach, ripe nectarine, and a whisper of orange zest. Juicy white peach leads on the palate with mouth-coating flavor, giving way to delicate notes of strawberry and raspberry through a bright, clean finish. Crafted from 75% Nebbiolo and 25% Grenache, the 2025 Rosato strikes a balance that is rare in a wine this light. The Grenache lends body and stunning color, while the Nebbiolo brings its signature freshness and acid-driven vitality — the result is a wine that feels weightless in the glass yet lingers long after the last sip.
The 2025 vintage stands out as an exceptional year, shaped by timely rainfall, moderate warmth, and consistently cool nights. Winter rains replenished the soils, leading to an even budbreak and strong early growth, while ideal flowering conditions delivered balanced yields. A warm but steady summer allowed for slow, even ripening, preserving vibrant acidity and encouraging full flavor development. As the season progressed, careful canopy management and precise vineyard decisions became essential, culminating in a tightly timed harvest ahead of an October rain event. The result is a true “winemaker’s vintage,” where every decision carried weight. The white wines from 2025 are bright, aromatic, and poised to stand as a benchmark year for the category, capturing the energy and clarity of the vintage.
By increasing the amount of Grenache in the final blend to 25% — closer to true Provence style — we achieved a stunning pale salmon color and a richer, more mouth-coating body than any previous release. The Nebbiolo, harvested later than usual to find the perfect balance of acid and ripeness, brings its signature freshness and lingering finish. “The chemistry was perfect this year.
