Delicious Manchego Potato Gratin with herbs and melted cheese.

This decadent gratin is the perfect way to elevate a meal and pairs beautifully with our Estate Cabernet Sauvignon or Proprietary Left Bank.

Ingredients

  • 3 lb Yukon Gold potatoes (peeled & thinly sliced)
  • 1 pt heavy cream
  • 1 pt milk
  • 1½ cups Manchego cheese (grated)
  • 2 bay leaves
  • 1 tsp garlic (chopped)
  • Salt & pepper (to taste)

Directions

  1. Preheat oven to 350F.

  2. Simmer peeled potatoes with bay leaves and garlic in the milk and cream until just cooked through. Gently pour potatoes through colander over a large bowl so you collect the cream. Remove the bay leaves. Season with salt & pepper.

  3. Layer potatoes into a baking dish, alternating with layers of grated cheese. Add back 2 cups of cream. Top with remaining cheese and place into the oven for 30 minutes, until browned and bubbling on top. Let slightly cool. Slice and enjoy!

Sweet, beautifully integrated tannins frame notes of cassis, currants, blueberries, licorice, and café mocha. This is a ripe wine, but it has the minerality to keep it fresh, and the potential to age nicely for the next 10 to 15 years.
