At Round Pond, our Red Wine Vinegars are unique because they fuse traditional techniques with state-of-the-art technology. While many classic methods are still the benchmark for excellence in winemaking, scientific advancements now allow us to perfectly measure grape physiology, meticulously control temperatures throughout the fermentation process, and adjust the climate as necessary in the cellar with the simple push of a button. These innovations ensure quality in our wines, but it is the singular approach of the classic Orleans method that helps bring special character to Round Pond Red Wine Vinegars.

The Orleans method of vinegar making, which derives its name from the French town where the process originated, began as a rare artisan technique nearly 200 years ago. Those who practiced the craft were esteemed for possessing an especially unique talent. Round Pond premium hand-blended vinegars are made according to this time-honored method. From some of the finest fruit grown on the Round Pond estate, we create a classic red wine before introducing a Mother Culture to begin the transformation into vinegar. After it matures for a minimum of 10 months in French oak, we bottle individual lots by hand.

To ensure that our customers always receive products that are vibrant and intense, our vinegars age in French oak until demand dictates the next bottling. With this in mind, every bottle of Round Pond Vinegar bears a lot number to identify when it was bottled.
