As we wrap up another harvest season at the estate, we find ourselves filled with both pride and anticipation. Our winemaking team has done an extraordinary job shepherding this vintage from vine to cellar, and the early signs point to something truly special. The color, balance, and purity we’re tasting already have us eager for what these wines will become.

With your upcoming club release, we are thrilled to share several new wines crafted just for this time of year — the 2023 Malbec, 2022 Petit Verdot, 2022 Syrah, 2022 Nebbiolo, and our 2024 Pinot Noir. Some of these varietals have been absent from our portfolio for quite some time, which makes it all the more meaningful to offer them now, just in time to open and enjoy around your holiday table.

Below, you’ll find updates from Winemaker Jeff Plant, along with new seasonal recipes from Estate Chef Fernando Arias to inspire festive cooking and gathering.

We are also excited to share a piece of news that means a great deal to us: Round Pond Estate has been named Best Cabernet Sauvignon Winery by LUXlife. This recognition is an honor we owe entirely to the extraordinary team who pour their talent and passion into every aspect of what we do — from the hands that tend the vines to the team that welcomes you here at the estate.

As the holiday season approaches, our hearts are full. We look forward to time with loved ones, to good meals shared, and to the meaningful rituals that mark this time of year. Most of all, we are grateful for you — for your support, your enthusiasm, and your place in the Round Pond community.

Fall 2025

WINEMAKER UPDATE

We officially wrapped harvest on October 17, finishing just minutes before the first major rains of the season arrived. It was one of the most compact harvests in recent memory — eight incredibly focused days in which we brought in 173 tons, accounting for about 90% of our estate fruit. To put that in perspective, we typically harvest around 210 tons over the course of three to four weeks. This year, nature gave us a narrow window, and our team rose to the challenge with precision and speed.

The growing season itself was defined by a cool summer that allowed us to extend our hang time. Those consistently moderate temperatures preserved acidity, lifted aromatics, and built remarkable flavor intensity across both whites and reds. Then, from October 5–8, we experienced a short stretch of warm days — just enough heat to push ripeness exactly where we needed it. The fruit was close beforehand, but that final bump brought everything into perfect balance.

Because conditions were so favorable, we were able to monitor ripening closely and time each pick with intention. The resulting fruit shows extraordinary freshness, purity, and depth. We’re already seeing deep color, beautiful concentration, and a sense of refinement that gives us tremendous optimism.

Looking ahead, 2025 is shaping up to be a winemaker’s vintage — one in which nature cooperated at every stage, allowing the vineyard to develop at its own rhythm. The early signs point to wines that are bright, balanced, floral, and deeply site-expressive. This could very well become a reference-point vintage for Round Pond, built to age and built to impress.

Most importantly, I want to recognize the incredible people behind these wines. This year asked a lot of us, and our small team met every moment with dedication, talent, and grit. I couldn’t be more grateful for the work they put into this harvest.

It was an intense season, but an immensely rewarding one. We’re proud of what’s now resting in the cellar, and we can’t wait to share what this vintage will become.

Black Cardamom & Star Anise Sugar

Included in your club shipment

Crafted to complement the cozy flavors of the winter season, our Black Cardamom & Star Anise Sugar is a warm, aromatic blend with notes of smoky cardamom, sweet star anise, and a hint of citrus. Comforting, fragrant, and beautifully balanced, it’s the perfect way to add depth and seasonal spice to your favorite cold-weather dishes.

Try it brushed over glazed chicken thighs or sprinkled onto roasted carrots for a sweet-savory finish. It’s also wonderful in festive desserts or anywhere you want a touch of warmth and holiday-inspired flavor.

Glazed Chicken Thighs

Glazed Chicken Thighs

A flavorful, cold-weather favorite from Chef Fernando’s kitchen, these glazed chicken thighs are richly aromatic with warm spice, subtle sweetness, and a savory finish. Our Black Cardamom & Star Anise Sugar brings depth and balance to the glaze, making this dish perfect for cozy winter evenings or holiday gatherings.

Ingredients

4 bone-in, skin-on chicken thighs
1 packet Round Pond Black Cardamom & Star Anise Sugar
1 tbsp Round Pond Chili Infused Olive Oil
1 tbsp soy sauce
1 tbsp rice vinegar (or apple cider vinegar)
1 tsp ginger, peeled and grated
1 garlic clove, minced
1 tbsp canola oil
Salt and pepper, to taste
½ tsp chili flakes
Garnish: chopped scallions or cilantro

Directions

  1. Preheat oven to 375°F (190°C).
  2. Pat chicken thighs dry and season both sides with salt and pepper.
  3. To make the glaze, combine the spice mix, soy sauce, vinegar, ginger, garlic, and chili flakes in a small bowl. Stir until the sugar dissolves.
  4. Heat canola oil in an oven-safe skillet over medium heat. Sear chicken skin-side down until deeply golden and crispy, about 5–7 minutes. Flip and cook the other side for 3–4 minutes.
  5. Pour the glaze over the chicken, spooning it over to coat. Transfer the skillet to the oven and roast for 15–20 minutes.
  6. To finish, spoon the thickened glaze from the pan over the chicken and garnish with fresh herbs. Serve over steamed rice.

This glaze also works beautifully on duck, eggplant, roasted mushrooms, or pork belly.

Spiced Carrots with Tahini Drizzle

Spiced Carrots with Tahini Drizzle

Earthy, comforting, and gently sweet, these roasted carrots are brought to life by the warm, aromatic depth of our Black Cardamom & Star Anise Sugar. The blend adds just the right touch of winter spice, beautifully complemented by a bright, creamy tahini drizzle. Perfect for holiday tables or simple cold-weather dinners, this dish is a celebration of seasonal flavor.

Ingredients

500g carrots, peeled & halved
1 packet Round Pond Black Cardamom & Star Anise Sugar
2 tbsp Round Pond Sage Infused Olive Oil
Salt and pepper, to taste
2 tbsp lemon juice
2 tbsp tahini
1 garlic clove, grated
Water, as needed

Directions

  1. Toss carrots with olive oil, spice mix, salt, and pepper.
  2. Line a sheet tray with parchment or foil and roast at 400°F (200°C) for 25–30 minutes, until tender.
  3. Meanwhile, whisk tahini with garlic, lemon juice, and a splash of water until smooth and pourable.
  4. Arrange warm carrots on a serving platter and drizzle with the tahini sauce before serving.

Spiced Caramel Poached Pears

Elegant, aromatic, and perfectly suited for the winter season, these poached pears showcase the rich warmth of our Black Cardamom & Star Anise Sugar. The blend infuses the fruit with deep spice and gentle sweetness, finished with a glossy spiced syrup that feels both festive and comforting. It’s a simple yet stunning dessert for holiday gatherings or cozy nights in.

Ingredients

2 ripe but firm pears (Bosc or Anjou work best), peeled and halved
1 packet Round Pond Black Cardamom & Star Anise Sugar
1 cup water
½ cup white wine (we love Jannine Bovet for this!)
1 tbsp lemon juice
1 tsp vanilla extract
A pinch of salt
Optional garnish: whipped cream, toasted nuts, vanilla ice cream, or a drizzle of Round Pond Blood Orange Olive Oil

Directions

  1. To prepare the poaching liquid, combine spice mix, water, wine, lemon juice, vanilla, and salt in a saucepan over medium heat. Stir until dissolved.
  2. Place the pear halves in the liquid, cut side down. Bring to a gentle simmer, cover with the lid slightly ajar, and poach for 20–25 minutes, turning halfway through.
  3. Once the pears are tender, remove them from the liquid and set aside.
  4. Increase heat and simmer the poaching liquid until reduced by about half and slightly thickened into a light syrup, 5–10 minutes.
  5. To serve, place pear halves in bowls and spoon the warm spiced syrup over the top. Garnish as desired.

Pro tip: Double the syrup and store it — it’s delicious over pancakes, yogurt, or even stirred into cocktails.
